Veggie Stew w/ Salt & Vinegar Mashed Potatoes

One of the challenges I've given myself is to pull out old favorites from my recipe binder and transform them into (mostly) vegetarian dishes.  This Rachael Ray recipe originally featured cod & shrimp in the starring role.  However, the salt & vinegar mashed potatoes always stole the show for me...what a great idea!  I love salt & vinegar chips...really, I love anything with vinegar--I can't resist that salty/tangy combo.  These mashed potatoes mimic the taste of my favorite potato chip, and they taste great with the stew with or without the fish.

What are some favorite recipes YOU could adapt (or already have) to make more veggie-centric?

ON THE SIDE SUGGESTION: We didn't need anything extra added to the dish.  Just pile on the potatoes & stew!
