Curried Rice with Shrimp

Happy Monday, everyone!  This is the day of the week that I head to the grocery stores--it's extra special today because I get to shop for some of YOU!

Today's meal is an old Real Simple recipe from 2008.  Occasionally I make up my own recipes, but I mostly draw from my favorite sources: magazines, blogs, & cookbooks.  Whenever I share a recipe with you, I'm going to send you directly to the source--I don't want to rip anyone off!  When I started sharing recipes on this site, I felt uncomfortable with how to give credit where it was due...sometimes I do "adapt" a recipe to fit my taste, portion, or ingredients on hand, but let's be honest--I didn't do any heavy lifting in the creation.  I admire the chefs and home cooks that come up with the recipes I use to feed my family, and I want to share them with you so you can do the same!

Curried Rice w/ Shrimp via Real Simple
You may have seen the word "curried" and completely written this meal off, but I want to let you know that it is very mild and tastes like comfort food to me.  I encourage you to give it a try!

If you'd like to eliminate shrimp from the recipe for health or cost reasons, substitute a veggie you like instead--I'll be using snap peas, which are a favorite of my 3-yr-old.
