Spinach Dip w/ Toasted Pita

If you can make a side for dinner, why not an appetizer?  This was one of those "make this, not that" recipes from a 2010 Rachael Ray magazine.  Everyone loves a warm, creamy dip--perhaps this is the perfect dish for your "I hate spinach/artichokes" declaring family member.

I'm serving this with pita that I plan to cut into wedges & toast in a 350 degree oven.  Other options could be to serve with tortilla chips, pita chips, crackers, fresh cut veggies, or slices of crusty bread.
