This week was full of some of my favorite summer recipes--HBD to me!
Cornell Chicken has been and still is my preferred home-cooked meal by my parents. Mom marinates the meat & boils the corn on the cob, and Dad grills the meat to the point of perfection. Chicken thighs soak up the marinade the best, and they are always my first choice of medium for this salty/tangy marinade.
I found Pasta w/ Marinated Tomatoes in a summer issue of Real Simple a few years back. I only make a handful of recipes more than once. (People find that remarkable when I mention it--there are just too many recipes out there to try to keep making the same thing!) This is one of the repeats that keeps on coming back. And one thing I've learned through trial & error: a little onion goes a long way with this one.
Grilled Honey-Vinegar Pork Chops came from a recent issue of Rachael Ray's magazine. I still have yet to try them this week, but I'm looking forward to it! They sounded so yummy--can you tell I'm a fan of vinegar as an ingredient in recipes? I love the sweet/sour or salty/sour combo!
The Salad w/ Peaches, Basil, & Mozzarella is another repeat favorite. Fresh, summery goodness. (Peaches are my favorite fruit, and Jones Orchard is my favorite place to get 'em. I need to take my daughter out there soon to pick some ourselves--yum!) The recipe usually calls for the peaches, basil, and mozz to be served alone, but I added greens for a little extra something.
I like routines and traditions. Pizza Night is one of them. I like that I've spread my pizzas all over the city, and now YOU are all having Pizza Night, too. :)
