Bread of the week: Rosemary Focaccia Bread
Dressing of the week: Orange Vinaigrette

1. Chicken & Quinoa Burritos
  • Healthy & delicious shredded chicken, quinoa, avocado, & cilantro yumminess wrapped in a whole wheat tortilla.  
  • {Prep: Slice avocado, assemble wrap; 10 mins total}
2. Pasta Salad w/ Melon
  • Rotini pasta (hot or cold) with refreshing balls of honeydew & cantaloupe and slices of red onion.
  • {Prep: Cook pasta, slice onion, toss with prepped melon, serve or chill; 15-20 mins total}
3. Chip & Dip Patties
  • This Rachael Ray magazine recipe looks different, and I'm interested in trying it.  Ground beef gets rolled in crushed tortilla chips & cooked in a skillet, then served with a little quick guacamole on the side.
  • {Form patties, roll in mixture, cook, slice avocado & tomato; 20 mins total}
4. Purple Hull Peas w/ Cornbread
  • You get the ingredients for this simple and delicious southern-vegetarian(ish) dinner.  (I'll be including bacon to include with the beans, but you're more than welcome to swap it out.)  It will be easy to prepare, but it will take a little while to simmer--enough time to whip up some good ole Jiffy cornbread.
  • {Slice onion, sauté onion & bacon, add beans & water; In the meantime, prepare Jiffy mix as stated on the box--all ingredients will be included; 45 mins total}
5. Three Cheese Pizza
  • We've stretched our picky-eaters' taste-buds enough the past few weeks--some plain cheese pizza on homemade crust is headed your way.  Depending on the status of my pending oven delivery & your own preferences, this can be delivered with fresh dough or pre-made.
  • {See above--either heat and serve or flatten dough, add toppings & bake; 15 mins total either way}
