This Week's Menu (July #4)

After taking my "birthday week" off, I'm back for the last week of July!



My homegrown basil is begging to be made into this creamy pesto sauce--a simple topping for pasta.

Pepperjack cheese & black beans are melted inside flour tortillas & served with Mexican corn on the cob.

Corn, avocado, & (shhhh!) tofu come together to make up Pioneer Woman's recipe, wrapped in Romaine hearts.

I'm breaking from the "standard" this week with this Peach, Mozzarella, & Basil salad.  Light, sweet, salty, & herby.

Chocolate Covered Strawberry Smoothies: dark chocolate chips, strawberries, almond milk, chia seeds. Who knew breakfast could taste like dessert?
