Week of Sunday, July 22, 2012

July is still closed for new orders, but the gates will open again next week.  Get ready!

{If you are a current client and want first dibs on an August subscription, email me at frugalfoodiememphis@gmail.com and I'll put you on my list.}

Also, if you love free stuff (a quart of ice cream for you and a free meal for your buddy), get your friends to purchase meals next week and everyone will win!

Check back on Wednesday and I'll be revealing my recipes for those of you who want to play at home. :)

This week's menu:

Bread of the week: Rosemary Focaccia Bread
Dressing of the week: Orange Vinaigrette

1. Chicken & Quinoa Burritos
  • Healthy & delicious shredded chicken, quinoa, avocado, & cilantro yumminess wrapped in a whole wheat tortilla.
  • {Prep: Slice avocado, assemble wrap; 10 mins total}
2. Pasta Salad w/ Melon
  • Rotini pasta (hot or cold) with refreshing balls of honeydew & cantaloupe and slices of red onion.
  • {Prep: Cook pasta, slice onion, toss with prepped melon, serve or chill; 15-20 mins total}
3. Chip & Dip Patties
  • This Rachael Ray magazine recipe looks different, and I'm interested in trying it.  Ground beef gets rolled in crushed tortilla chips & cooked in a skillet, then served with a little quick guacamole on the side.
  • {Form patties, roll in mixture, cook, slice avocado & tomato; 20 mins total}
4. Purple Hull Peas w/ Cornbread
  • You get the ingredients for this simple and delicious southern-vegetarian(ish) dinner.  (I'll be including bacon to include with the beans, but you're more than welcome to swap it out.)  It will be easy to prepare, but it will take a little while to simmer--enough time to whip up some good ole Jiffy cornbread.
  • {Slice onion, sauté onion & bacon, add beans & water; In the meantime, prepare Jiffy mix as stated on the box--all ingredients will be included; 45 mins total}
5. Three Cheese Pizza
  • We've stretched our picky-eaters' taste-buds enough the past few weeks--some plain cheese pizza on homemade crust is headed your way.  Depending on the status of my pending oven delivery & your own preferences, this can be delivered with fresh dough or pre-made.
  • {See above--either heat and serve or flatten dough, add toppings & bake; 15 mins total either way}

Week of Sunday, July 8, 2012

Whew!  It's hot up in these kitchens!  Tried to plan a menu for you this week that will keep you cool...

Deadline for ordering: Friday, July 13th

Subscriptions for the month of July being taken through Friday, July 13th.
(This ONLY means that ordering "by the month" will be closed.  Order all the meals by the week or day that you want ALL through July!)

Subscription Dressing of the Week: Garlic Maple Vinaigrette
Subscription Bread of the Week: Parkerhouse Rolls (AKA Sister Schubert's from scratch!!)

1. Yogurt-Marinated Grilled Chicken
  • (Or as Jenny Rosenstrach, author of "Dinner: A Love Story," calls it: Grilled Chicken for People Who Hate Grilled Chicken.  PS: This is my latest cookbook obsession--a FUN read!)
  • {Preparation: Grill 3-4 minutes each side; 10 mins total}
2. Greek Pasta Salad
  • It doesn't get any easier than this (for you).  Chilled rotini pasta with tomatoes, cucumber, onion, feta, and some yummy seasonings.
  • {Preparation: Open & enjoy, 0 mins total}
3. Chimichurri Nachos
  • Three words to reel you in: Las Delicias Chips.  You'll top em with marinated (and already grilled) skirt steak, mozzarella cheese, and crumbled cotija cheese.
  • {Preparation: Assemble nachos and briefly bake, heat steak in microwave, 10 mins total}
4. Eleven Madison Park's Strawberry Gazpacho
  • Ok, I know we just had Peach Gazpacho last week.  But it is the coldest and easiest summer meal you can offer for dinner.  Gazpachos are hit and miss with me...so, let's experiment!  This one has strawberries, cucumbers, bell peppers, and garlic that are marinated together before blending with extras.  Does this boggle your mind?  Me too.
  • {Preparation: Open & enjoy, 0 mins total}
5. Pizza with Grape Tomatoes & Zucchini
  • Homemade pizza crust, tomato sauce, farmers' market produce, fresh mozzarella.  Enough said.
  • {Preparation: Heat in oven, 10-15 mins total}
